Pumpkin Soup
14 ounce can unsweetened coconut milk
3 tablespoons pure maple syrup
2 cups organic chicken broth or vegetable broth (for vegan)
1/4 cup pecans or walnuts
1 tablespoons extra virgin olive oil
1/4 cup chopped onion
Salt
Black Pepper
15 ounce can pumpkin puree (I use fresh pumpkin or pumpkin puree I’ve frozen in advance)
2 tablespoons curry powder
4 tablespoons plain Greek yogurt
1 organic Granny Smith apple, chopped into small pieces
Heat oil in a soup pot over medium heat. Add chopped onion, cook for about 5 minutes. Stir in curry powder and pumpkin puree. Whisk in broth until well blended. Add maple syrup and salt and pepper to taste. Simmer for about 10 minutes. Lower heat to low and whisk in coconut milk. Heat without boiling.
Garnish each bowl of soup with a dollop of Greek yogurt, a few apple pieces, and nuts.
Serves 4
